Ok, ok, ok. I know it's been a LONG time and LONG summer since I got on the blog. I'm sorry. Call it life...that's my only excuse.
I was down and out for a couple weeks after sinus surgery in August. The kids were in my parent's care. I was in Greg's care. And all of us were in the care of friends - who happen to be very good in the kitchen! We got some great meals. This is a fav from my dear friend Ann. She claims that it's from Southern Living, but I think the credit is all hers! It makes a very generous 9x13, so splitting it between 2 8x8's and sharing with a friend is a good idea. It reheats well, as I found out when I craved it for breakfast the next morning!
Three Cheese Pasta
1 (16 oz.) package ziti
2(10 oz.) containers refrigerated Alfredo sauce
1 (8 oz.) container sour cream
1 (15 oz.) container ricotta cheese
2 large eggs, lightly beaten
1/4 cup grated parmesan cheese
1/4 cup chopped parsley
1 1/2 cups shredded mozzarella cheese
1. Preheat oven to 350. Cook ziti according to package directions; drain well.
2. Stir together Alfredo sauce and sour cream in a large bowl; add ziti, stirring until blended. Spoon half of mixture into a lightly greased 13 x 9-inch baking dish.
3. Stir together ricotta cheese and next 3 ingredients; spread evenly over pasta mixture in dish. Spoon remaining pasta mixture over ricotta cheese layer; sprinkle with mozzarella cheese. Bake, uncovered, at 350 for 30 minutes or until bubbly. Enjoy!
