Found this recipe from Southern Living when I wanted to take my rice to the next level. Very easy and very tasty. I cooked half the recipe to serve my family of 4 and served it with tilapia and green veggies. Would be nice with chicken or pork, too.
Orange Rice
2 cups diced celery with leaves
1/2 cup chopped onion
1/2 cup butter or margarine, melted
2 cups water
1 tsp. salt
1 T. grated orange rind
1 cup fresh orange juice
1 1/2 cups uncooked long-grain rice
Saute celery and onion in butter in large sauce pan over medium heat 5 minutes or until tender. Add water, salt, orange rind and orange juice. Bring to a boil. Add rice; cover, reduce heat, and simmer 20 minutes or until the liquid is absorbed and rice is tender. Yield 6 cups.
